3 Tbsp unsalted butter
2 extra large yellow onions, thinly sliced
pinch of sugar
1/2 tsp salt
1/4 tsp freshly ground black pepper
1 tsp caraway seeds
1/4 cup Budweiser
3 tbsp coarse-grained mustard
1 lb uncooked bratwurst
In a large skillet, melt the butter over medium-high heat. Add the onions, sugar, salt, pepper, caraway and 2 tbsp of the beer. Stir to coat the onions and cover. Lower the heat to medium-low and cook. stirring occassionally, until the onions are very tender, about 35 minutes (remove the cover for a few minutes if any liquid remains).
In a bowl, stir together the remaining 2 tbsps of beer and the mustard and spread over the bratwurst. Let stand at room temperature for 15 minutes. Lay the bratwurst on the grill rack. If using a gas grill, close the lid. Grill until lightly browned on all sides and cooked through, 8-10 minutes. Serve immediately with onions.
